酒店餐廳英語強化培訓法
目前，影響酒店員工提高英語能力的主要因素有三個：一、外賓少，沒有語言環境；二、不敢上前與外賓對話；三、自覺和酒店組織的強化培訓機會少。
在校學的英語語法規范，但口語較少。而外賓的日常用語既簡單又隨意，用語法去套根本無法解釋。要在短期內學好口語，做到應付自如絕非一日之功。一般餐廳常用英語可根據外賓用餐是最常涉及的問題，從中收集挑選出二、三十個有一定代表性，簡單、易記，適合于餐廳使用的句子。
強化培訓可分兩步。第一步：熟記常用英語，規定時間，死記硬背（不講解語法）。然后在每天開餐前后短暫的休息時間內進行培訓，輪流對話，強化模擬，隨時糾正發音。半周后，由主管排出值臺表，要求輪流為外賓點菜（第一次可由主管陪同），活學活用。進行第一步需要注意的是：一、點菜時力求聽懂客人關鍵詞語，并且迅速作出判斷，不必猜測整句話的意思。例如：客人提出"May I change this beer to sprite ?"（我是否能把啤酒換成雪碧？）這句話的關鍵詞是"change"（換）。這就要求服務員有靈活應變的能力。二、不要試圖拚湊完整的一句話再回答客人，這樣既浪費時間，也無把握。在明白意思后，給予簡短回答即可。當然，如果自己根本不能回答，應立即向客人說："Wait a minute ,please"，（請等一會兒。）然后迅速請主管解決。第二步：要求服務員能熟練地運用英語介紹和推銷本餐廳的名菜和酒水。一般餐廳均有中英文對照的菜單和酒單，服務員不必死記硬背。名菜、名點、名酒每樣熟記十種左右就基本上夠用了。重點要向客人介紹名菜、名酒的口味和特色。
例如："This is Magnificent Hall specializing in Chao cuisine ,but we also serve some famous Guangdong dishes . Would you like to try some ?"（這是潮州餐廳，但也提供廣東菜肴，您是否品嘗品嘗？）
如果服務員不推銷，只憑客人挑選，就很難讓客人品嘗到真正的地方風味。經過服務員的介紹，既可增加餐廳收入，也向客人展示了中國這個烹飪王國中富有特色的美酒佳肴。

點菜就餐的典型次序是：找一張桌子坐下——看菜單－—點菜——就餐－—付錢－—離開。英語語言的表達基本上也是依照次順序。“訂餐”在英文中有兩種說 法，即 to book a table 和 make a reservation。在英國以及其它很多國家，餐廳一般劃分為吸煙區和非吸煙區。一進餐 廳，服務員會主動征詢客人的意見，然后引領客人前往所選擇的區域就餐。
